Celebrate Sinulog the Pig & Palm Way!

Cebu is home to Sinulog, and is also home to Michelin-starred Chef Jason Atherton’s first restaurant in the Philippines, The Pig & Palm. To celebrate the country’s grandest festival, the tapas-style dining hotspot concocted two fruity specialty cocktails plus a dish that best complements it, available until January 21.

The first is a vodka-based mix that captures the #SoundOfSinulog, the ‘Prititiiit’. For a drink that is smooth with a hint of spice, try the Sinulog Sour made with Bulleit Rye Whiskey. The Pig & Palm’s featured dish is Chicken Yakitori with creamy satay sauce, a balance of sweet and savory.

The Pig & Palm is open Tuesdays to Sundays from 11:00 am onwards and is located at the MSY Tower, Pescadores Road, Cebu Business Park, Cebu City. Visit www.thepigandpalm.ph and follow @thepigandpalm on Instagram and Facebook for the latest updates. For inquiries and reservations, contact +63 917 657 6866 or call 255 8249.

Steak-All-You-Can at Marble + Grain Steakhouse

I love steak and I always get excited when a new steakhouse opens in Cebu.  Recently I got invited by our friends from Bai Hotel to have a preview of their steak-all-you-can promo.  For 999++, one can enjoy as much Certified Angus Beef Ribeye.  I really think that this promo will be a big hit among Cebuano steak lovers.

Marble + Grain Steakhouse Steak-All-You-Can

A normal serving of high-quality steak in Cebu costs over 1,000 pesos.  Sure there are places that offer cheaper ones but most of them use cheaper cuts of beef or lower grade beef.  A good steak is kinda expensive in the country because the meat comes from countries like the USA, Australia or Japan.  The transportation costs drive the prices up and there are very few local alternatives.

When Marble+Grain Steakhouse said that they will be serving a Certified Angus Beef for their promo, I was truly impressed because I believed that at 999++, it comes out like a bargain if you are big steak eater like me.  A serving of steak at some of my favorite steakhouses in the city actually costs upwards 1,200 which makes Bai Hotel's steak-all-you-can promo an interesting proposition.

It was actually my first time to visit Bai Hotel since they opened late last year.  When I got the invite, I was a bit excited to see what their F and B team is capable of since I knew some of their kitchen staff.  My goal really was just to have an awesome steak lunch.

My first impression was that the place looks good but I think it is too small for a restaurant that is offering a super value steak promo.  I think the lines are going to be long and I would probably reserve a table first rather than going there to try your luck to get a table.

The look and feel of Marble+Grain Steakhouse are elegant and it is the type of restaurant that you should dress up when you dine there.  It is even somehow romantic but more on the mature side. It is a perfect spot to celebrate a 5-year wedding anniversary.

Marble + Grain Steakhouse, Bai Hotel, James Van Haght, Certified Angus Beef, Steak All You Can , Cebu's Best Food Blog, Kalami Cebu

They have an extensive selection of wines making the restaurant a good choice for steak and wine nights.  For the steaks, they are giving diners a lot of choices including the ones that they dry age on their own.  This is a good news for the more sophisticated steak lovers.

Marble + Grain Steakhouse, Bai Hotel, James Van Haght, Certified Angus Beef, Steak All You Can , Cebu's Best Food Blog, Kalami Cebu

During our preview, they served a good line-up of side dishes, salads, and desserts but to be honest, I was really focused on their steak.  I did not want to be distracted by the complimentary dishes. So when they said that we can start our lunch, I was the first one to approach British-Filipino sous chef Jaimes Van Haght for a serving of steak.

He sliced a 250-gram steak ready for grilling.  I told him I wanted it medium rare.  So technically,  I was the first one to try out their steak-all-you-can.  After a couple of minutes, my steak arrived and it was properly cooked to my liking. It had a good sear and I totally enjoyed it. I was like thinking that I can probably stay there the whole day.

Marble + Grain Steakhouse, Bai Hotel, James Van Haght, Certified Angus Beef, Steak All You Can , Cebu's Best Food Blog, Kalami Cebu

Since our group wanted to have a better photo, I had them make another 200 gram steak for a post-meal photo session and I ended eating the steak.  After eating around 450 grams of steak, actually still felt that I had room for more but I had to go.

All in all, I had a pleasant experience and I would surely go back there some time.  At 999++, the pricing is just perfect for any steak lover out there who is looking for a new hangout.  As for my final verdict, they definitely get my seal of approval.

Marble + Grain Steakhouse is located at the ground floor Bai Hotel in Ouano Avenue, Mandaue City.  They are open for lunch and dinner.  The Steak All You Can Promo is until March 31, 2018.

Candiez Cafe Mandaue Full Review

Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger

Since the 90's, cafes have increased in numbers alongside the internet dependence of Filipinos.  The cafe phenomenon started with internet cafes, then early this century, big branded coffee shops like Starbuck's started to dominate the local scene. Now, cafes are known for "expensive" coffee and calorie-rich offerings. I rarely have a decent meal at a cafe and that is where Candiez Cafe is different.

Candiez Cafe - a Good Cafe in Mandaue

I am not really a cafe regular but I love good coffee. Ever since I discovered and read about third wave coffee, I found a different appreciation of coffee. Most of the time, I drink coffee after eating some food.  I mean real food.  Most of the popular cafes have limited if not, overpriced selections.   When I got invited to Candiez Cafe via Instagram, I did not have many expectations.   In fact, I was a bit speculative why someone opens a new cafe brand of all places, Mandaue.

Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger

My first impression was I found the place pretty cute. The mellow colors and the furniture seemed to give a relaxing vibe. Seeing the offerings on the counter made me think that this just another coffee and cake place.   I am partly right.

Candiez Cafe actually has a long menu that includes All-Day breakfast meals, sandwiches, pasta, salads, main courses, and of course, coffee and cake. The idea of having decent hot food at a cute cafe somehow is a bit foreign to me and I liked it a lot.

Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger, Christian Cafe

In short, Candiez Cafe is a Christian-themed cafe with a cozy ambiance that has WIFI and a solid line-up of hot dishes, coffee, and desserts. It is located in the North Park Building in Mandaue.  Parking will never be an issue as the building has a lot of parking spaces at the basement.

Candiez Cafe - Taste Test

On my second visit to Candiez Cafe, I brought some blogger friends to sample some of their offerings.   We were treated to some of their best dishes and drinks.  Here are some stand-outs:

Sugbo's Best Spicy Chorizo
Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger, Christian Cafe
Jomar Lipon and Mae Ogdoc really like the spicy chorizo.  It is an all-day breakfast item that comes with sunny side up egg and a special dip.  It is not complicated but many will love the chorizo because it is spicy and it makes you eat lots of rice.

Pork Chops
Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger, Christian Cafe
For lunch, you can have their pesto pork chop. This one is very flavorful and it is no surprise that a lot of office people who come to Candiez for lunch would typicfally order this.

Bangus
Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger, Christian Cafe
For people who are avoiding red meat, they can order Bangus (milkfish).  It is really nice of them for putting some non-red meat options on the menu.

Pasta
Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger, Christian Cafe
They have several choices for pasta which could be perfect as a snack or meal alternative. I liked the pasta with the Spanish sardines but the other options were good also.

Silog
Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger, Christian Cafe
I enjoyed the tapsilog even if I found the serving a bit small.  The tapa was delicious which really made me want some more on my plate.

Brownies and Corn Muffins
Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger, Christian Cafe
Candiez Cafe prides itself on making their own desserts.  Well, I can find several winners on their dessert menu.  Herbert Kikoy loved the corn muffins so much.  If you are a sweet tooth, you will definitely have a great time at this cafe.

Frappes
Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger, Christian Cafe
Candiez Cafe is a coffee shop too!  My friends enjoyed their frappes and other coffee-based drinks. Having several options for coffee makes this cafe a good place to study or do some writing.

Matcha Latte
Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger, Christian Cafe
If you love matcha, try their matcha latte.  It comes in hot or cold variants and it would be perfect with their red velvet cake or corn muffin.

Fruit Shakes

Candiez Cafe, Cafes in Mandaue, Matcha Latte, Coffee shops in Cebu, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger, Christian Cafe
If you do not like coffee or tea, you can have some fruit shake.  Aldrin Suan loved the strawberry  shake while Glenn Abucay enjoyed the cranberry shake.

Kalami Cebu Summary:

What I like most at Candiez Cafe is the cafe presents a variety of options.  They might not serve the best tapsilog in town but it is hard to find a cafe that serves a long list of good food. If you become a regular at this cafe, it will never be boring as Candiez gives a lot of choices to choose from. Yes, choices!  That is what I like most here because a foodie like me could crave different food on different days and if I lived or work in that area, I would probably go there more often.

Candiez Cafe is located at North Park Building, U.N. Avenue Mandaue City.   The building shares the same parking lot with Maayo Hotel.

Celebrating Chinese New Year 2018 in Cebu

I am not Chinese but the possibility of having a Chinese ancestor is not really remote.  As Ka Bino Guerrero said, "if you shake a Cebuano's family tree hard enough, a Chinese will fall off!". We recently celebrated the Lunar New Year or more popularly known as Chinese New Year.   I consider myself fortunate as I was able to witness two grand Chinese New Year celebrations.   I went to Marco Polo Plaza Cebu for Chinese New Year's Eve and then to Waterfront Airport Hotel and Casino Mactan for the New Year's Day feast.

Chinese New Years Eve at Marco Polo Plaza Cebu

On Chinese New Year's Eve, I went to Marco Polo Plaza Cebu to witness how they meet the new year.  Marco Polo Plaza Cebu's  #CNY2018 celebration had firecrackers, kung fu exhibition, Lion and Dragon dances, traditional wee sang toss and coin toss.  Cebu City's premier hotel left no stones unturned in meeting 2018, the year of the Earth Dog.  It was really grand.

As a food blogger though, the highlight for me would be the feast that happens to start an auspicious year.   I enjoyed the variety of Chinese dishes as well as my Cafe Marco favorites like the Malicious Cookies.

When it comes to hotel buffets, Marco Polo Plaza Cebu never disappoints. I enjoyed several platefuls and as usual, I went home with a #happytummy.

In the end, I had to leave some room on my bulging stomach because my Chinese New Year's celebration was just getting started.

Chinese New Year's Lunch at Waterfront Hotel and Casino Mactan

After an awesome Chinese New Year's Eve, I had to wake up early because I had a New Year's lunch invite and I had visitors from Singapore.   Singaporean Blogger Grace Tan and her husband Derek were visiting Cebu.  Since they are Chinese, it was fitting that I bring them along to lunch.

I drove the cute Singaporean couple along with my blogging buddies to Waterfront Hotel in Mactan.  Waterfront's #CNY2018 festivities also had Lion and Dragon dances before we celebrated Chinese New Year with a bountiful lunch.

The highlight of their Chinese New Year's banquet was their Prosperity Hotpot.  It is pretty similar to Shabu-Shabu where you make your own soup with a wide choice of ingredients.  Since I know Grace and Derek were more familiar with this type of cuisine, I made them in-charge of the hot pot.  Grace made an awesome Prosperity Hotpot and I really loved it.

Chinese New Year, Chinese New Year 2018, Marco Polo Plaza Cebu, Waterfront Hotel and Casino Mactan, Prosperity Hotpot, Hotel Buffets in Cebu, Kalami Cebu, Cebu Food Blog

I enjoyed the prosperity hotpot along with the excellent Filipino dishes of the Cafe Uno buffet.  I also got to enjoy a lot of sticky desserts because Chinese tradition believes that eating sweet and sticky dishes during New Year will bring a lot of luck.

Thanks to my friends from Waterfront Hotel and Casino Mactan and Marco Polo Plaza Cebu, I started my lunar new year with a big smile on my face and a full belly.  Gong Xi Fa Cai and may we all be blessed with a lot of luck and fortune in 2018!!!

A couple of months ago, I was raving about the Steak-All-You-Can Promo at Bai Hotel Cebu's Marble + Grain Steakhouse.  This time, our friends from Bai Hotel invited me to the launch of their Salmon-All-You-Can promo.  I found the promo very timely especially it was the Lenten season but after trying it out with my friends, only the price says it was a promo since everything was spot on.

Salmon-All-You-Can at Marble + Grain Steakhouse

When it comes to fish, Salmon is probably the most popular among commercial fishes along with Tuna.   One of its distinct characteristics is it orange-colored meat. We normally find Salmon in sushi bars but it is versatile enough that some people even use the Salmon heads for sinigang.

Bai Hotel Cebu, Eat all you can in Mandaue, salmon-all-you-can, Marble + Grain Steakhouse, Cebuano YouTubers, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger

For the Salmon-All-You-Can promo, Bai Hotel Cebu was offering unlimited servings of grilled Norweigan Salmon for only 999++.  Since man does not live on salmon alone, they included unlimited servings of soup, sides, salads, and desserts along with the grilled fish.   On paper, I would say that the promo could be worth it if you love fish so much.  To make it your money's worth, you have to finish around 2-3 servings and the salmon must be really good since the best restaurants in Cebu serves grilled salmon at 300 to 700 pesos per serving.

Kalami Cebu Verdict

Bai Hotel Cebu, Eat all you can in Mandaue, salmon-all-you-can, Marble + Grain Steakhouse, Cebuano YouTubers, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger
The skeptic in me immediately died after my first bite of their grilled salmon.   It was like "Mentos" in a good way.  It was crispy on the outside and soft on the inside. It was so good that even up to now I can say that it was one of the best fish that I ever tasted.  That was how a grilled salmon should taste like. So, my first serving was finished in record time.  I immediately ordered another one.

I was seated with Cebu-based Mexican-American Blogger Naomi Bernales of JugandPugs.com and I asked her thoughts about the salmon because I know she is a pescatarian.  She said it was really good.  Great! It was not just me who thought that the grilled salmon at Marble + Grain was awesome.

An interesting idea went into my head. What if I make someone who does not eat fish, eat the grilled salmon?

Jomie Hospital eats Marble + Grain's Salmon

Bisaya YouTuber Jomie Hospital was eating nearby and I know he is not a big fan of fish.  I asked him to come to Marble + Grain to taste the grilled Norwegian Salmon.  I only expected him to have a bite and then let Glenn Abucay finished his plate.  Well, I was surprised that he liked it so much that he is able to finish a plateful.

Bai Hotel Cebu, Eat all you can in Mandaue, salmon-all-you-can, Marble + Grain Steakhouse, Cebuano YouTubers, Kalami Cebu, Cebu Food Blog, Filipino Food Blogger

A big congratulations to Chef James Van Haght for such wonderful salmon that even a non-fish eater was easily converted. It was a good salmon cooked the right way.   Now, I am looking forward to the future offerings of Marble + Grain Steakhouse.  The bar has been set and my expectations are now at a higher level.

In the end, it was an amazing lunch.  You can see the big smiles of the Cebuano YouTubers after previewing Bai Hotel's Salmon All-You-Can.  I would like to send a big shout out to Mr. Alfred Reyes for the hospitality.  Kalami Cebu gives this promo a big thumbs up!!!

Tongro Korean BBQ: The Best Barbecue Place in Mactan

Barbecue has always been a Pinoy favorite.  I grew up eating at the old Larsian in the Fuente Osmena area. I am a big fan of Ric's Barbecue in Ramos before as well as Matias BBQ and Junjun and Malou's in Mandaue.  My barbecue adventures though never reached Mactan Island until recently when I discovered Tongro Korean BBQ.

The Best Barbecue Place in Mactan Island

A lot of my friends from Mactan said that I should try Tongo Korean BBQ.  I've been wanting to eat there for years I would say and I always end up in another place because I did not know where to park my car.   The place seems to be always packed with people during dinner time. One time I even had snacks at Scape Skydeck so that I can check out the place but since I was full already, I decided against it.

Finally, a chance came last month when my vlogging squad called "Gamhanan Gang" went island hopping on a Sunday. After the island hopping adventure, we were looking for a place to have dinner in Mactan.  I found out from Tongro's owner that there are actually parking spaces at the side of the restaurant so we went there.

Tongro Korean BBQ Menu

What sets Tongro Korean BBQ apart is that they serve both Filipino and Korean barbecue. Their Filipino barbecue has even a Korean twist as it can come in Spicy and Super Spicy flavors.  The Pinoy Barbecue line-up includes pork, chicken, fish as well as offal offerings like liver and skin.

Korean Barbecue, Barbecue Places in Cebu, Kalami Cebu, Cebu Food Blogger, Filipino Food Blog, Best BBQ in Mactan, Tongro Korean BBQ, Gamhanan Gang, Bisaya Vloggers

For the Korean Barbecue, they are only offering pork cuts.  They have Samgyeopsal (pork belly), Moksal (pork shoulder), Hangjeongsal (pork jaw), and Kalmegisal (lean pork).  One order of these pork cuts is around 200-250 pesos ($4-$5) and an order includes soup, kimchi, steamed egg and fresh vegetables.

They also have also short orders like the Jeyukbokum.  It is a Korean spicy stir-fried pork dish.  The place also serves beer and soju which makes it perfect for dinner with friends.

Kalami Cebu Verdict

I like it a lot.  This is the only restaurant I know that serves both Filipino and Korean Barbecue. You can practically get the best of both worlds here. Their Filipino barbecue is seasoned well and their super spicy barbecue can make a chilihead cry with joy.  The Korean bbq meal is packed with so many side dishes that one order can make you very full.  If you want to take your dining experience to another level then order some soju. One tip though, if you plan to eat here is that you have to wear something comfortable because the place does not have aircon.

In the end, my friends really had a great time here and it was one of the best Korean food trips that I experienced. Another plus here are the musicians who really play good music.  I would surely come back here soon.

By the way, Tongro Korean BBQ has a branch in Danao City so if you happen to live nearby you better check out their branch at Sands Gateway Mall.

Tongro Korean BBQ is located at Quezon National Highway, Lapu-Lapu City.

Whether you like it hot or cold their drinks come in reusable packaging.  Their cold drinks come in cute reusable tumblers. Should you decide to use a used tumbler for your next purchase, Macao Imperial Tea will give you a 10-peso discount.  I like it a lot because it is a sustainable dining practice.

#TheSustainableDiner: Why Use Reusable Tumblers?

Can you imagine how many plastic coffee cups do we throw away every day?  Worldwide we throw billions of disposable coffee cups/ tea cups daily.  Some coffee shops might say that they are using recyclable cups but in reality, only a small fraction is recycled.  A lot of these plastic wastes end up in the sewers or worse on rivers and mangroves.  Do you know that if you buy a cup of coffee or tea in a disposable cup every day, you will be responsible for 10 kilos of plastic waste every year?  So, think about the environment the next time you buy your favorite grande mocha latte.

3 Other Good Things About Macao Imperial Tea

The Macao Imperial Tea at SM Seaside Cebu is a full-service tea shop with seats for customers.  Here are 3 more good points about this new coffee and tea place:

  1. Food - They offer food like fish tofu, sausages, and meatballs.  They also offer desserts and pastries just like other coffee shops. I tried the fish tofu and sausages and they were good. They were the perfect "hot food" to go along with their cold drinks while hanging out at Macao Imperial Tea.
  2. Place - Since they are also competing with cute Korean cafes, Macao Imperial Tea SM Seaside City has some nooks that are very nice for Instagram.  You can even use their big teddy bear as props for your next social media posting.
  3. Sockets and Wifi - They are offering Free Wifi and their branch has no shortage of sockets for charging. It makes this newly opened cafe a perfect spot to do some work or spend the whole afternoon playing your favorite online game.

For locals, nothing beats good Filipino food. No wonder some of the most successful restaurants in the country have Filipino dishes on their menu.  After years of success in Cagayan de Oro City and Davao City, Boy Zugba comes to Cebu to give Cebuanos a chance to taste their version of "Kusina Bisaya".

Boy Zugba and the Visayan Culture

Boy Zugba started in Cagayan de Oro (CDO) City and they are putting the City of Golden Friendship front and center with dishes like Sinuglaw de Cagayan which uses Tabon-Tabon, Pansit sa Pulis, Fishball sa Corrales, and Kiping Dala Latik. A lot of the menu items have funny Visayan names that would appeal to the Bisdaks.

Visayan humor is present not only on their menu but also on how they decorate their restaurants.  Boy Zugba's walls are filled with hugot lines that can probably compete with Medyo Maldito.  If you are a big fan of Bisaya food and hugot lines, it's a no-brainer that you have to visit and eat at Boy Zugba.

I got to preview their boodle meals: I Sea Food, Meat Me at Da Sea, and Karne-Vorous and easily found several favorites. The Cheezy Chorizo and Sinuglaw were awesome.  The different sinugba items were also very good and if I were a vegetarian, I could spend the whole day eating just their Crispy Kangkong.

What if you are alone? Do not worry because they also have solo meals called Bagetz meals that can be upgraded to unli-rice for big rice eaters like Jomie Hospital.  When I go back here, I would probably get an order of their Cheezy Chorizo to go along with my Bagetz meal.

For sweets, I highly recommend the Kiping dala Latik. Kiping also known as Cab-cab, which is made of cassava that is made into thin wafers then drizzled with latik (caramelized coconut cream).  It is a magnificent meal ender that reminds me a lot of my childhood summers spent in Bohol.  Another good one is their What's your Plan, Leche Flan?

Kalami Cebu Verdict

I had an absolutely fantastic time at #BoyZugbaCebu.  They serve the food that I love to eat every day.  The type of food that you will never grow tired of eating. I will definitely come back there soon to try out the dishes that I was not able to taste.  I really like that they are promoting local food and I believe that they are doing a good job.

The service crew was fun and jolly.  They even gamely danced the "Bodots" in front of the media and bloggers. The place looks Instagram-worthy and I enjoyed reading the hugot lines on the walls.  All-in-all this restaurant has all the check marks for a great Filipino restaurant.  Parking can be an issue though, but I think there are so many Cebuanos like me who is willing to walk for good food.  If you are hungry already then go to Boy Zugba at the Central Bloc of Cebu IT Park.

#MakeItSafePH : End Cyberbullying and Hate Language

A few days ago,  I was asked to write something related to Globe Telecom's #MakeitSafePH campaign.  I mindfully said "Yes", because I agreed with the premise that we need to make the internet safe.  I was just supposed to write the article on my other blog but then an incident happened recently that gave me an urgency to support this campaign not only through words but also on video.  Content creators are exposed to hateful language daily and it is time to make a stand.

#MakeitSafePH: The Most Prolific Social Media users in the World

In 2017, the Philippines had around 67 million internet users according to Digital in 2018.  The figure is roughly about 60% of the total population of the country.  It is up from 60 million the previous year.  For the 3rd straight year, we, Filipinos, hold the distinction of spending the most number of hours in social media.  As internet usage increases and the access to internet spreads, more and more children are able to access social media sites. They use apps, like Facebook and Instagram to connect with their friends and get updates. They also use Facebook and Youtube as a primary source of entertainment.

With a great potential audience and the chance to get instant fame, a lot of people also devote more time to content creation, like making videos, parodies, skits, or simply displaying their skills for the world to see.  It is easier now to make video content. In fact, a lot of celebrities are starting to transition to digital media.  With the improved capabilities of smartphones, ordinary people can create an entertaining or informative video that can be uploaded to Facebook, YouTube, Instagram, and Twitter.

Over the past couple of years, I have seen a substantial increase in the number of content creators.  I have seen many young creators sing, play instruments, dance, lip sync, or do viral challenges.  Some parents even make channels for their toddler.  Social media and internet are making it easy for the world to see your skills.

One of the unique features of social media that cannot be replicated by television or cinemas is instant commenting.  Facebook, Youtube, and other popular social media sites allow other users to make comments to your content. Whether it is a picture, video or blog post, social media platforms allow users (even strangers) to comment, like, and share.  Well, getting instant feedback is one of the major motivators of digital creators.  The more likes, comments, and shares that they get the more motivated they become in their craft.  However, there is actually a bad side with commenting.

#MakeitSafePH: The Bad Side of Unfiltered Commenting

Comments are the lifeblood of creators and bloggers.  Search engines and social media sites encourage content that will lead to comments and they made a term for that, engagement. The more engaging your content is, the better it will be ranked in the different platforms.  Engagement is a key indicator whether your content is viral or not. To be viral is the goal of almost all creators.  The ability to make viral posts make creators attractive to brands, politicians or just anyone who wants to run a successful social media campaign.  In short, creators ask and even encourage comments.

The need for comments gave rise to techniques like comment syndication (making friends comment on posts in return for comments on their posts), controversial content (which easily strokes emotions), spamming (cut and paste commenting), and trolling (a deliberate act of making controversial comments with the aim of getting into a fight or a longer argument).  These practices are effective ways of getting engagement but methods like trolling could go out of hand and lead to using hateful language and cyberbullying.

A lot of social media sites have unfiltered commenting especially when the commenter is using the local language or dialect. People can say anything on social media sites with little or no consequences.  Some people even use multiple fake accounts to carry out cyberbullying.  It might be a fair fight if it is between adults but in many instances cyberbullying involves children.

Having children getting exposed to hate language could also lead them to use that language on others.  Parents cannot monitor all the videos that the children watch and all the comments that they read. Some kids could think that foul and hurtful language is cool because it is common on the internet.  This will increase the chance for them to try to use hurtful words even just for fun.

#MakeitSafePH: Anatomy of a Cyberbullying Attack

A friend of mine is a parent of a 10-year-old YouTube creator.  His son makes videos about trying to solve a Rubik's Cube puzzle at the shortest amount of time usually less than 8 seconds which is actually faster than a drag race car.  Yesterday, one of the kid's YouTube videos got a hateful comment from someone.  The bad thing is that the kid reads the comments which made the parents more upset.  Here are some screenshots of the incident (photos are from my friend cropped by me).

Stage 1: Comment using Foul Language

#MakeitSafePH, Globe Telecom, Kalami Cebu, Cebu Food Blogger, Cebu Food, Cebu Vlogger, End Cyberbulllying
The attacker is most likely a fellow Filipino and he/she appears to be the type who watches speedcubers.  The troll made it appear that he is a fan of the world record holder and he thinks that the boy is no match for Feliks Zemdeg.  The dad simply replied that the argument is pointless.

Stage 2: The Use of Another Account

#MakeitSafePH, Globe Telecom, Kalami Cebu, Cebu Food Blogger, Cebu Food, Cebu Vlogger, End Cyberbulllying

The right reaction is normally is to report the comment that will lead to a ban for the offending party. The counter to that is to use another account.  It is easy to have multiple accounts especially in sites that allow people to use nicknames as usernames.  As long as you have a valid email account, you can easily make another fake social media account.

This time, another account is making similar attacks to the boy's content.  This time the comment is about the boy's parents. The attacker seemed very determined to look for a fight and he is not backing down.

Step 3: Countertrolled but still fighting

#MakeitSafePH, Globe Telecom, Kalami Cebu, Cebu Food Blogger, Cebu Food, Cebu Vlogger, End Cyberbulllying
Social media sites allow channel or page owners to moderate comment on their content.  Admins are allowed to report as well as delete comments.  One of the best ways to fight cyberbullying is simply to delete inappropriate comments.  After the troll's previous comment was deleted, it still managed to make another comment.

#MakeitSafePH:  How to Limit Cyberbullying

As long as anybody is free to make comments on any content, cyberbullying will not be totally eradicated but there are ways to lessen attacks or limit its impact.  Here some tips on preventing/minimizing attacks:

  1. Report - Use the report button when you see inappropriate comments and foul language in the comment section.
  2. Use Privacy Settings - Although creators typically want the whole world to see their videos, there might be content that should not be exposed to comments by strangers.  You may tweak the privacy settings of your content to limit your audience.
  3. Delete - Delete immediately bad comments which do not deserve to be answered.  Some people would try to be smart by trying to "outlogic" the attacker but it will just prolong the attack. You do not need to answer certain types of comments, especially by fake accounts.
  4. Screenshots - Screenshots are your friend in any cyberbullying attack.  People can delete the offensive posts but screenshots could be used as your evidence in case things escalate to a court case.
  5. Care - Creators have feelings.  You might think that some of them are used to it but in reality, they will feel pain with abusive comments. We have to teach kids that before we make comments on pictures or videos, we have to put ourselves in their shoes.  Think of the Golden Rule before making negative comments.
  6. Avoid Trolling - Most of us had one way or another made comments to make fun of people. It is easy to make fun of how people look especially on memes. It is easy to tag someone who we think an insult disguised as a meme is referring to.  It might not be deliberate but there is a chance that the other party could feel bad.
  7. Avoid Sharing, Liking, and Commenting "Hateful" Content - Insults could be funny.  Pictures of private people could be used as a funny meme. Sometimes we just unmindfully like or even share content that could be possibly a cyberbullying attack.  For parents, we have to tell kids that we have to mindful of the content that we like and share.

#MakeitSafePH:  Make the Internet Safe for Young Creators

There are so many young creators now making regular content on Youtube and Facebook.  They are vulnerable to trolls, hate comments, and even cyberbullying attacks.  Each one of us can play a role in making the internet safe for creators by being mindful with our comments and also in helping report inappropriate behavior.

I believe that the internet is a wonderful place for talented Filipinos to display their skills to the world.  It is also a great platform to promote our country and our people. It is important to make it a safe place for young creators so that they will be inspired to continue honing their craft and eventually become a world-class talent.

About Globe's #MakeitSafePH Campaign:

As a purveyor of the digital lifestyle, Globe Telecom takes it upon itself to ensure that society as a whole remains safe from numerous threats facing anyone using the internet – from viruses, Trojan, and Ransomware which put multi-million-peso businesses at risk, hacking attempts for illicit purposes, and cases of cyberbullying to name a few.

This campaign is relevant to the different levels of society.  For government and big businesses, the issue could be data protection.  For consumers, they could be exposed to cyber crimes like hacking, identity theft, phishing, and cyberbullying.

The internet has taken a bigger role for most of us.  While the platform offers big benefits, there are still dangers that lurk that can be prevented with vigilance and effective information dissemination.

Kalami Cebu is one with Globe Telecom in the campaign to make the internet safer.

Best Restaurants in Cebu: The Weekend

Enjoying a really good ribeye at the Weekend

One of the first ever favorite restaurants of Kalami Cebu was Carnivore in The Gallery, Mabolo.  I was so impressed with the Cebuano chefs who managed it because they were not afraid to innovate and use some advanced cooking methods.  Too bad, they closed down already.  I really missed the meat dishes of Kurt Famador and company.  I was hoping to see more Cebuano culinary talents to step up their game and compete with the "big boys" of the local restaurant scene.  Then, The Weekend happened!  As #TheWeekendPH turns 1, I do believe that Chef Jan Rodriguez took the cudgels of becoming the benchmark of an excellent local restaurant.

The Cebu Restaurant Scene

In the local restaurant industry, the easy path to success is to open a restaurant that offers Filipino food but there are people who dare to defy norms and surpass expectations for local chefs. In the past couple of years, we have seen several outstanding restaurants that set up shop in Cebu. Most of them were bannered by foreign chefs. For decades now, we also saw the rise of culinary schools that pumped hundreds of graduates yearly to the vibrant Cebu hotel and restaurant industry.  Some graduates even opened their restaurants after just a couple of years removed from culinary school.

I expect a lot of good things in the Cebu restaurant scene because there is a lot of room for growth in the industry plus the abundance of talent available.  But I am a bit disappointed because only a few Filipino chefs are brave enough to go head to head with the foreign chefs who made Cebu their second home.

I have nothing against foreigners who run local restaurants.  In fact, I always admire their level of competence and competitiveness.  Many of the foreign chefs are actually the ones who are pushing the boundaries in developing the local cuisine. Their restaurants are actually one of the best breeding grounds of local talents, not just in the kitchen but also, in the front of the house.  These foreign-manned restaurants also elevate the local dining culture by introducing new flavors, new dishes and even, new dining habits like food and wine pairing.

Because restaurants like Pig and Palm, Abaca Group, Circa 1900, L'Artisan, Soho Park, and Anzani are so good, only a few local chefs venture into the fine-dining scene.   One of them is Jan Rodriguez of The Weekend.

The Weekend, The Greenery, Pope John Paui II Avenue, Cebu City

The Weekend: The Benchmark for Local Restaurants

The Weekend is located at The Gallery in Pope John Paul II Avenue in Mabolo.  It was one of the first few tenants of this commercial complex.  Many of the "neighbors" of the restaurant have either closed down already or rebranded yet this restaurant/bistro/bar/taproom has become stronger than ever.  Just like my old favorite Carnivore, The Weekend is also known for its meat dishes.

The best-selling Fat Bastard Pork Chop at the Weekend

Among the most popular dishes here is the Fat Bastard.  When Jan Rodriguez perfected the recipe of his signature pork chop dish, he thought that it was so awesome that he had to give it a unique name.  The 400 grams of pork goodness has been a bestseller since Day 1.

the Weekend's version of Bacon and Eggs, the Bacon Bourbon Steak

For fans of bacon and eggs, you have to try their Bacon Bourbon Steak and order extra servings of dirty rice.  The servings are good to share but this dish is also perfect for an after-workout meal. The dirty rice is like a special "sinangag" made with beef fat.  If you want to gain weight, then have a serving of dirty rice every day.

A generous serving of Ribeye Steak

For the ultimate carnivore,  I would recommend their ribeye.  Gram for gram, it is one of the best steaks that you can find in the whole of Cebu.

Jupiter's Acorn for the vegetarian regulars of The Weekend

While meat lovers will truly enjoy feasting here, The Weekend also has a good selection of items that can make our vegetarian friends happy.  Jupiter's Acorn is an amazing salad that has crunchy and peppery romaine lettuce mixed with the acidity of apples and the sweetness of candied walnuts.  It is a joy to eat.  In my past visits, I introduced some of my friends to their Buffalo cauliflower.   They loved it as much as the chicken wing version.

#TheWeekendPH also is one of Cebu's best bars and taprooms

Food is just a start actually because, after dinner, The Weekend transforms into one of the best places to drink in Cebu.  Jan is probably the number 1 promoter of fine alcoholic beverages in the Queen City of the South.  He can talk about whiskey, wine, craft beer, rum, or any other alcoholic drink like someone who has a Ph.D. on Booze.  He is so passionate about it and it shows.  Check out The Weekend's taproom.  Have a drink or two and let me know what do you think about it.

When it comes to pricing, I can say that you can get your money's worth on their food and drinks.  This place is not cheap but their prices are alright.  If you consider their quality and serving size, they are definitely more affordable than their competition.

the Weekend's Chef Jan Rodriguez

Anniversary Dinner with Weekend's Jan Rodriguez

Perfecting the Dark Daiquiri at The Weekend bar

A few days ago, I got invited to dinner at The Weekend with some media friends.  We all arrived before 6 pm and Jan started us with some Dark Daiquiri.  Jan talked about how hard for a bartender to perfect a simple daiquiri.  He also mentioned that rum must taste like brown sugar.  Well, their dark daiquiri was easy and fun to drink.  It was really refreshing and the balance of flavors will make you drink some more and most likely get you wasted if you are not careful.  I liked it a lot.

Salmon Poke Canape by Jan Rodriguez

We then started our dinner with the canape version of a Salmon Poke dish that has yet to be introduced.  It was like a really good Norwegian Salmon kinilaw that was served on top of toasted bread.  It works!  Then we had the Jupiter's Acorn as our salad.

Mushroom Pappardelle made from Shiitake and Shimeji Mushrooms

The plates started coming fast as they served a mushroom pappardelle made from shiitake and shimeji mushrooms followed by the awesome threesome of The Weekend's specialties: Fat Bastard, Bacon Bourbon Steak, and Ribeye.  We were having so much fun.  We were really full and probably thought that the fantastic dinner is over when...

The Weekend's Queso Flameado

Juan Elevado Tequila Cocktail Rocks!

When the Queso Flameado (Flaming Cheese) and Juan Elevado (Tequila Cocktail) arrived on the table.  Ending the anniversary dinner with some cheese and tequila made it as memorable as the discoveries I made talking to Jan, Patty Taboada, Antonio Java, Alexis Yap, Dr. Nestor Alonso, Glenn Loop and Honey Loop.  On that night, I learned a lot about rum, steaks, soy sauce, and even the secret ingredient for a delicious siomai.

Kalami Cebu Verdict:

For me, #TheWeekendPH has all the checkmarks for what it takes to compete with the best restaurants in Cebu.  If you plan to explore all the best restaurants in Cebu, I strongly suggest that you start at The Weekend to get a good point of reference on what is good food that is priced right.

The Favorite Snacks of Filipinos According to the Beach and the Plastic Pollution Problem

Filipino favorite snacks at Larawan Beach in Talisay City, Cebu

We recently celebrated Earth Day.  I have seen many people posting about ending plastic pollution and maybe, on that day many people refuse to use plastic.  As for my contribution on this topic, I would like to share my experience the last time I went to the beach.  As a food blogger, I discovered the favorite snacks of Filipinos or let say Cebuanos by picking up plastic trash at the beach.

It's the height of summer and this particular summer is really hot.  Just like the majority of Filipinos, I would love to go to the beach to take a dip and get away from the oven-like heat in our house.  Since the students are on vacation, our local beaches are packed with people.  When we go the beach, we normally bring food and drinks. We even assign someone to buy "chichirya" for the summer outing.  Most of our favorite snacks are in plastic packaging and most of the times, the packaging ends up on the beach or worse, in the sea.

A Trip to Larawan Beach

Larawan Beach, Talisay City, Cebu circa 2018

When I was a kid, Talisay was synonymous to the beach.  When people say that they are going to Talisay on a weekend, most likely they are going to the popular beaches of this city south of Cebu City.  One of the most popular beaches would be Larawan Beach and at that time, it was a great alternative to going to Opon (Mactan).

Fast forward 2018.  Talisay is not as popular anymore to beachgoers.  People now go further down south for a beach that is worthy to be on a travel blog or on Youtube videos.   They could go to the towns of Argao, Dalaguete, or Alcoy.  For people who want something more picturesque, they go to the Southwestern part of Cebu and go beach bumming in Alcoy and Badian.

When we mention Talisay, even Talisayons would say that their beaches are dirty and it is not the same as before.  I was really curious about the status of the beaches Talisay so I recruited some of my friends from the Cebu Content Creators (C3) to check it out.  I told them that I want to do a mini coastal cleanup.  I was able to recruit Aldrin Jake Suan of Aldrincore Moshpit and I thought that we will just be a duo for that Sunday.  Good thing, Vernon Go (http://www.vernongo.com/), Hanna Frejoles (https://beanintransit.com/), and CJ Estrada (https://www.foureyedlaagan.com/) joined in.

Larawan Beach, 2018

Summer 2018 at Larawan Beach Talisay Cebu

I was really surprised that there were so many people at the beach.  The Larawan Beach area was crowded and the eateries were packed.  We even had lechon and dugo-dugo for lunch in Rhea's Lechon at the entrance of Larawan Beach.  Talisay is known for its lechon and it is hard to resist lechon that is sold by the beach.

After a filling lunch, we then proceded with our beach clean up.

The Favorite Snacks of Pinoy Beachgoers "according to" Larawan Beach

CJ Estrada and Vernon Go picks up thrash in Larawan Beach

If Larawan Beach can talk, I could probably give "her" an hour of airtime.  I would have asked how was "she" been in the past couple of decades.  The beach cannot talk but looking at the trash that we found lying on the beach, I somehow learned the favorite snacks of Filipino beachgoers.  Here are some of the trash that we picked up:

Oishi Prawn Crackers thrown at Larawan Beach, Talisay Cebu
Product Name: Oishi Prawn Crackers
Manufacturer: Liwayway Marketing Corporation

I like this brand of prawn crackers.  I think this is the No.1 prawn cracker brand in the country.  This even has a spicy version and a larger packaging.

Plastic trash on the beaches of Cebu
Product Name: Oishi Fish Crackers
Manufacturer: Liwayway Marketing Corporation

This one is still made by the same company.  This variant is relatively new.  The Filipino-company started selling prawn crackers in 1974 and now they have several different snacks like fish crackers.  My other favorites from the same company are Rinbee, Cracklin', and Pillows.

Favorite snacks of Cebuanos at the beach
Product Name: Marty's Craklin'
Manufacturer: Liwayway Marketing Corporation

Oishi is really doing well in Cebu.  Marty's Cracklin' completed the trifecta of Oishi products on the beach. This snack variant was introduced in 2008 and it is still a big hit among Pinoys.

More plastic packaging thrown at Larawan Beach Cebu
Product Name: Black Chili Corn Chips
Manufacturer: Prifood

Prifood is a home-grown brand.  My personal favorite among their snack line-up is their Big Munch series.
Small plastic packaging a big factor in plastic pollution
Product Name: Sweet Chili Corn Chips
Manufacturer: Prifood

The packaging of these ones are very small but in a way, it is good if we want to limit junk food consumption but it could be bad if want to limit plastic waste.

Trash in Larawan Beach, Talisay City, Cebu
Product Name: Nissin Wafer
Manufacturer: Monde Nissin

Monde Nissin is another giant in the snacks industry and this company is known for many popular items like Skyflakes, Fita, Lucky Me!, and Bingo.

Universal Robina product packaging found at Larawan Beach
Product Name: Roller Coaster
Manufacturer: Universal Robina Corporation

I would have been shocked if I did not see a Jack N' Jill (URC) product in Larawan Beach.  When it comes to "chichirya", my top brand is definitely Jack N' Jill.  I grew up eating Chippy, Cheese Curls, Mr. Chips, Taquitos, V-Cut, Piattos and more.

Drinking Emperador at Larawan Beach and leaving trash

Our public beaches are like a free for all.  We can bring liquors, beer, and soft drinks.  We just need to dispose of bottles properly because broken bottles could cause wounds and glass bottles could last a million years if left floating in the sea.

Diapers are the worst trash at public beaches in the Philippines
Product: Diapers

Another common trash at the beach is used diapers. This kind of trash should not be on the beach.

Kalami Cebu 5 Quick Observations:

Cebu Content Creators Larawan Beach Clean Up April 2018

  1. A little effort can net a positive result- There were just 6 of us and we were able to collect 2 sackfuls of trash in just a few minutes.   Imagine if we scale this to 30 people or 300 people.  A few minutes of trash collection a day could really help maintain our beaches.  We do not need to go to Boracay to clean up our beaches.  One just has to go the neighborhood beach and do his/her part.
  2. Filipinos love Filipino snacks.  The best-selling snacks are still locally made. It might be the demographics but I do not see brands like Doritos, Snickers, or Cheetos at Larawan Beach.
  3. Small packaging is preferred.  While personally, I buy the biggest packaging for junk foods, most of the trash that we saw were in "menudo" or small packaging.
  4. People like to throw diapers on the beach.  Would you be mad if you step on one? I would.
  5. Oishi and its sister products are doing great in Cebu.
Plastic Trash and its Implications

We already know that plastic waste ends up in our seas and mangroves, clogs up our drainage system, and would take years to degrade but we still keep on using it and throwing it indiscriminately.  This kind of behavior is quite scary for the future generations.

According to Greenpeace, the Philippines is the number 3 ocean polluter in the world. The environmental organization is actually blaming the large multinational companies like Nestle, Procter and Gamble, and Unilever for this.  Try searching "The Great Pacific Garbage Patch" in Google to see how serious is the plastic pollution in our oceans.

When the plastic trash in The Great Pacific Garbage Patch gets broken down, they become microplastics or plastic particles that are smaller than 5 mm.  Microplastics could be ingested by the fish in the ocean which would eventually end up on our tables.  It is an issue that we should know about this early.  Can you imagine eating fish and seafood with seemingly invisible microplastics?

The more plastics that would end up in the ocean, the less viable the ocean becomes as a food source.  In the future, seafood could be a thing of the past.

What can We do?

The one thing that I am not going to do is blame anyone because we really did not know that plastics would become a big problem.  We were all programmed to consume and not think much of the packaging.  While we consume the food and drinks, the packagings, cups, and straws actually stay for a long long time.  Now that we know this, it is time to change our own habits.

  1. We have to bring our own tumblers for our drinks.  Some people say they would not buy bottled water anymore but summer is so hot and we really need to hydrate or else we "die".  Bringing our own tumblers would help but water companies should think of more water vending machine where we can buy water by the glass.  Coffee shops must also give incentives to people who bring their own tumbler like what Macao Imperial Tea is doing.
  2. Not using straws. This has been a hot item recently as worldwide we throw tons of straws and it is hard to recycle the waste. There have been innovators who made reusable straws and just like tumblers, we could bring a personal straw when we go out.
  3. Reduce food wastage. The mindset of wastage should be eliminated.  We should not waste food.  We have finite resource and we should simply throw away food. Mindful consumption of food and beverages is important in reducing waste in general.
  4. Use cloth diapers. You might say this is a backward practice but diapers are plastics.  If you saw the video on our coastal clean-up.  Diapers are a common waste that is thrown at the beach.  Billions of diapers become thrash every year and we cut down thousands of trees and make tons of plastics to make these.
  5. Use reusable containers.  It is time to end the use of one-time use items.  Instead of just teaching kids to throw away things, we can try to develop the habit reusing instead. It is not going to be easy but eventually, we will be forced to do it.
There are so many ways to really reduce plastic usage and our plastic dependence.  All we need is to be mindful and conscious that everything that we throw away could end up hurting us in the future.  Change is needed and we have to start it with ourselves.

What Can Companies and the Government Do?

Individuals could make an impact but the government and big companies also need to do their part.  We only live on one planet and it is in danger.  Our leaders and businessmen must also be aware that the next generation will face a bleak future if the mindless use of plastics and other pollutants is not abated.

For the government, they must take into account the current plastic problem in crafting legislation when it comes to the environment.   They must also be strict in enforcing laws against violators.  Fines should be bigger and laws must have teeth to deter companies from attempting to destroy the environment.  Local governments must also start investing in recycling facilities.  We could let other LGUs emulate what San Fernando, Pampanga is doing.  This city is recycling or composting 75% of their waste and they are aiming to increase their efficiency to above 90% levels.  Mandaue City started banning plastic bags. We need more proactive leaders who care for the environment.

For companies, they have to do a bigger share in things like coastal clean-ups.  Majority of the plastic wastes come from the biggest and most profitable companies in the country. It is important for them to also help clean up our beaches, mangroves, rivers, and oceans.  They must also try to find ways to make recyclable packaging of their products.  Bottled water or beverage companies could start putting refilling centers or refilling vendo machines to encourage the reuse of bottles. They can even initiate a bring back a bottle and get a discount on drinks. Some coffee shops are starting doing this but beverage companies could do this too.  We do this for soft drink companies where we return bottles for a deposit.  Why can't water/iced tea companies do this too?

It is not just about clean-ups but also a change of mindset is needed on people who do business. Companies and the government have to power to dramatically change our eating habits.  If the government suddenly bans plastic bottles then I think companies will also adjust. The consumers will then follow. If they cannot ban plastics, then an alternative is imposing a big tax on companies that use plastic packaging so that the companies will look for ways to reduce prices by making innovative changes in packages or how they sell their goods.

The problem is not simple but we need to address it now.  If we continue the path we are going then the next generation may never experience pristine beaches.  They will never experience bathing in rivers.  They might not even be allowed to eat seafood anymore.  The problem is real and it really hits close to home.  We live in a country that is one of the biggest users of plastic packaging in the world.  We consume billions worth of instant coffee, shampoo, noodles, snacks, bottled water, and beverages.  All these come in plastic packaging which could end up in the ocean which could then turn into microplastic that will be ingested by fish.   Fish and seafood which are a big part of our diet.

The next time you eat food in plastic packaging, you should think where the waste could potentially go.

Thank you for reading this pretty long blog post and if you have good ideas to help to solve this problem please let us know by making a comment.  We need great ideas and solutions to greatly reduce plastic pollution.  Any suggestion is greatly appreciated.

My Top 7 Dishes at Slate District!

The Gamhanan Gang Vloggers led by Jomie Hospital at Slate District

Slate District in Parkmall is turning one and I decided to make a rundown of my favorite dishes here.   This restaurant started by a couple who owns a chain of sisig stalls has become one of the best restaurants in the Parkmall-City Times Square area.

Slate District Turns One

I met owners Shane and Jackie Lua around late 2016 when they asked me to feature their Sisig Sarap brand.   Sisig Sarap has been doing well in places like Robinsons Fuente and this brand has even reached Mindanao.  Last year, they decided to open a restaurant that serves comfort food from around the world served on a slate.

Despite the heavy competition in the area, Slate District did very well that they even manage to expand their restaurant. Among my early favorites at this restaurant were their Pork Steak, Baby-back ribs and as of course, their Pork Sisir Sarap.

When I got to eat there recently, I was amazed at the new items on the menu and I was very happy that they are doing well.  Now, I am going to list down my Top 7 dishes here.

Top 7 Dishes at Slate District

No.7 Pasta Al Tartufo

Slate District's Pasta Al Tartufo

Slate District really specializes in meat dishes but they also offer pasta dishes like the Pasta Al Tartufo which is just perfect for people who like to have a light meal.   It is hard to resist al dente pasta with some creamy mushroom sauce.

No.6 Cheese District Burger

Slate District also serves burgers

This is the restaurant's signature burger.  It has mozzarella sticks on it which makes it so cheesy.  I also like its serving portion.

No.5 Barbecue Skewered District

4 kinds of skewers, chicken satay, pork yakiton, beef tapa, Hungarian sausage

At 540 pesos, this is one of the most expensive items on Slate District's menu but this is perfect to share with friends.  It has 4 kinds of skewers inspired by the travels of the owners all around the world.  It has a chicken satay, pork yakiton, Hungarian sausage, and beef tapa.

No.4 Jack Slate Truffle Chicken

Slate district's chicken wing options

If you love chicken wings then you will enjoy the Jack Slate Truffle Chicken. This well-presented wing dish is an Instagram #happytummy and #foodstagram favorite.  I am so sure that you cannot resist taking a photo of this dish.  It doesn't only look good but it tastes really good.

No.3 Slate Seafood Platter

Slate District Seafood Platter

Finally, Slate District has seafood dishes! The Slate Seafood platter is perfect for non-red meat lovers.  It has scallops, Shrimp Thermidor, and fish.  It's an awesome dish for people like Glenn Abucay, a pescatarian.

No.2 Grilled Pork Belrizo

Another favorite at Slate District, Grilled Pork Belrizo

When it comes to grilled items, two of my favorites are pork belly and chorizo and Slate District is combining these in one dish and they call it Belrizo. I could not resist this 2 in 1 combo.  The presentation is awesome and the taste? Even better!

No.1 Grilled Baby-Back Ribs

Slate district's Humongous Grilled Baby Back Ribs

I picked this as my number one dish here because of its sheer size and the price that I am paying for this.  It's a humongous serving of Grilled Baby-Back Ribs with java rice and it is priced below 200 pesos.

Amazing Anniversary Promo at Slate District

99-peso anniversary promo at Slate District

Since they are celebrating their first anniversary, the owners decided to have a promo every Thursday of May.  Every Thursday, they will be selling their Grilled Baby Back Ribs, Pork Steak and Pork Sisig Sarap at only 99 pesos for the first 50 customers.

Satisfied customers at Slate District Cebu

So, if you have time for lunch on a Thursday this month then you have to do is go to Parkmall Alfresco area and go to Slate District to avail of the amazing deal.  I hope to see you there!!!

Cebu Local Food: Mandaue's Bakagan

Bakagan or Boiled Pig's Head, a street food in Mandaue Cebu

I love exploring my city late at night to look for food.  In a way, I believe that in any city in the world some of the best local food comes past your bedtime.  While many are asleep, I am having an awesome food trip.  One of my recent discoveries is the super yummy Bakagan of Mandaue.  If you ask your well-to-do Cebuano foodie friends, what Bakagan is, the question will probably be returned to you.  Well, my short definition of Bakagan is that it is a soup dish made with the skull of the pig boiled for hours.  This dish is characterized by a gingery broth with pulled pork-like meat that is very tender.   Bakagan is perfect during the rainy season or after a drinking session.

Watch this VIDEO:

Why I love Bakagan?

I am a soup guy.  Cook me a good soup and we will be friends forever.  The Bakagan's soup is perfect if you drank too much beer and you want to go home fresh and energized.  This soup will wake you up and make you sweat out all the bad effects of alcohol.  If I am alone, I basically order soup with meat plus rice or corn grits and I get an awesome $1 hangover fix.   It is cheap which makes it addictive for some people.  I have friends who want to have bakagan like every night.

Bakagan Meat is facial meat of the pig boiled for hours

Spring rolls are also sold in the bakagan stall

Bakagan is definitely cheap and good but eating this dish is also a sustainable dining practice.   I have been a big supporter of #TheSustainableDiner and in reducing food wastage,  By eating meat from cheap parts like the head we are supporting "affluent" culinary/sustainability concepts like zero waste dining and reduction of carbon footprint.  I call these concepts affluent because, in reality, the people in lower income classes have been practicing these sustainable dining habits and they are not getting credit for it.  Instead of throwing the skull of the pig, the stall owners make it an awesome dish.

At 10 pm, people start to flock to the bakagan stall

A lot of Filipinos eat heads, innards, brains, ears, feet, and even eyes.  One great example is the Bakagan.  You can order a boiled skull of the pig for 250 pesos or $5 and you get to enjoy the brain, tongue, jaw meat and other good stuff that you can "scavenge" from the head.   It is quite a unique experience if you are not into offal.  The good thing though in the bakagan stall is that you have an option to just have the meat.

Kalami Cebu typical bakagan dinner includes soup, spring rolls and corn grits

I know that this is not for everyone but if happen to look for an interesting gastronomic thrill in Mandaue City, Cebu,  I will surely point you to the corner pfg A.S. Fortuna and Hernan Cortes Streets to try Bakagan.  The stall only opens around 10 pm and it will close before sunrise.  For me, it is one of my best local food discoveries in recent years.   I hope to see you there!!

Have you tried Bakagan?

Hai Shin Lou Marco Polo Plaza Cebu: My First Meal

Hai Shin Lou Marco Polo Plaza Cebu. The Seafood King opens in Cebu
Marco Polo Plaza Cebu recently opened a new food and beverage outlet named Hai Shin Lou or Seafood King.  This Chinese restaurant is actually a branch of a famous Makati restaurant of the same name.  Hai Shin Lou aims to be the benchmark of Chinese restaurants in Cebu and they surely have the pedigree to do it.

Hai Shin Lou - Marco Polo Plaza Cebu's Chinese Restaurant

The first ever Hai Shin Lou opened in 2003 at Arnaiz Avenue in Makati.  The owners got some of the best chefs in Hong Kong to establish "the best Cantonese restaurant in town".  Hai Shin Lou means Seafood King and one of the highlights of dining here is having live seafood taken from an aquarium and cooked to your liking.   The restaurant also does not use MSG so that diners will not feel cheated when it comes to flavors and ingredients.

The owners of the restaurant, for years, resisted the temptation to expand.  Co-owner Alejandro Tengco intimated that they did not want their restaurant's quality to deteriorate due to having too many branches to manage.  Hai Shin Lou is always going to be synonymous with high-quality dishes.

In 2017, the Ty Group decided that they want to open a new restaurant at their Marco Polo Plaza Cebu Hotel.  The owners of one of Cebu's premier hotels were actually loyal patrons of Hai Shin Lou.  As the saying goes, they made an offer that the Chinese restaurant's owners cannot refuse.  Now, Marco Polo Plaza has its own Chinese restaurant.  I really think that it is apt that the hotel has a Chinese restaurant as Marco Polo spent a lot of years in China.

Hai Shin Lou's Alejandro Tengco having lunch with Cebu media

My First Meal at Hai Shin Lou

I was lucky to be one of the first few people invited to dine at Hai Shin Lou Cebu.  It was August 8, 2018, when they opened their doors to Cebuanos.  I was actually seated at the table where co-owner Alejandro Tengco was seated along with some media and bloggers friend.  Also seated with us was Manna Alcaraz of Marco Polo Plaza Cebu.

Here is what was served to us:

Shaomai or Siomai from Hai Shin Lou Cebu

The delicious Shrimp Dumpling of Hai Shin Lou Marco Polo Plaza Cebu

Hai Shin Lou's Taro Dumpling stuffed with Scallops

We started off with a trio of steamed and fried dim sum.  Dim Sum is very familiar with Cebuanos.  In fact, Cebuanos love dim sum.  Dim sum is a style of Cantonese cuisine that has food served in bite-sized pieces and often presented in small steamer baskets.  For that day, we had Shaomai (steamed pork and prawn dumpling topped with crab roe), Shrimp Dumpling or hakaw (hā gáau), and Taro Dumpling (Deep fried dumpling made of mashed taro stuffed with scallops).

Well, the meal started on the right foot as we were served with something familiar and easy to gauge.  The dim sum dishes were spot on.  I am a big hakaw fan and I loved their shrimp dumpling.  The wrap might be too thick according to a food critic friend but for me, the flavor is just phenomenal.  I never had a  hā gáau this good for quite some time.

Hai Shin Lou's Pprk Asado: Is it the best in Cebu?

Soyed Chicken that can rival the best of HK and Singapore

After boasting off their dim sum making capabilities, our friends from Hai Shin Lou then served us a pair of meat specialties: barbecue pork and soyed chicken.  Boss Alejandro even joked that he will close the restaurant if we do not think their barbecue pork or asado (char siu) is not up to par with the best in Cebu.  Well, I might just do an Asado comparison in the future because of that statement.  A tablemate also mentioned that the soyed chicken was as tasty the ones they had in Singapore.  For me, the dishes were well-cooked and seasoned perfectly.  One of the strengths of this restaurant is definitely their sauces.

Swahe, a favorite at Hai Shin Lou Cebu

I would have complained to Manna if we were not served some seafood dishes that day. They cannot call themselves Seafood King if we will just have a filling "yum cha" meal. Well, the next dish that was served to us was Swahe or steamed live shrimps.  We actually ate this with our hands.  The shrimps were so sweet that I could probably sit there the whole day and just eat swahe.  The shrimps had good size too.

homemade beancurd in a hot pot made by an HK Chef

fresh crabmeat with seasonal vegetables (Hai Shin Lou)

After tasting dim sum, meats, and seafood, they then serve some of the more complicated dishes.  We had the fish fillet with homemade beancurd in a hot pot, and fresh crabmeat with seasonal vegetables.  Plus, just like any Chinese celebratory meals, we had Yang Chow Fried Rice. To be honest, I really find it puzzling why they served the fried rice last but according to Mr.  Tengco, the rice or starch is served last because its only eaten as a filler on your stomach.

Normally, Chinese Lauriat meals will have 8-15 dishes and if rice is served first, most likely, the diners will not be able to enjoy the last 3-5 dishes because they will surely be full.   I get the logic but for purely gastronomic enjoyment, I would love to have some rice with these yummy dishes. Rules are rules, though.  The last two hot dishes were excellent too and it made me curious what else can the chefs do.  I would love to eat here again and try the other creations from the wok.

The addictive Snow Ball of Hai Shin Lou Marco Polo Plaza Cebu Hotel

Almond Jelly with Fruit Cocktail with a Cebuano Twist

To cap our meal, we were served with Snow Ball and Almond Jelly with Fruit Cocktail.  If there is some dish that mesmerized me that day, it was definitely the snow ball. It was soft, sweet, and cold. Writing this makes me want to go back to Hai Shin Lou and order a dozen for myself.  I also liked that they added some mangoes on their fruit cocktail that had strawberries.  The desserts really made the whole meal super memorable.  I surely recommend this restaurant.

To conclude, my first meal at Hai Shin Lou Marco Polo Plaza Cebu was glorious.  It was FREE but I will surely be back there to pay for a good Cantonese meal.  Are they the best Chinese restaurant in Cebu? I really do not know.  For now, they are the most expensive Chinese restaurant in the city but so far, I think they have what it takes to be the best.

Which do you think is the best Chinese restaurant on the island?  Let me know your suggestions by making a comment so that I can try it out.

Lucky 9: 9th Abaca Baking Company Branch Opens in Robinsons Galleria Cebu

Carlo Olano of Kalami Cebu and Emma Villarente at Abaca Baking Company, Robinsons Galleria Cebu

Barely 3 years after opening its maiden branch, Abaca Baking Company (ABC) has opened its ninth branch at Robinsons Galleria Cebu.  This bakery/coffee shop/ all-day breakfast place has been providing Cebuanos the most delicious pastries and bread in the Queen City of the South.  One thing I love about ABC is their ability to come out with awesome creations at Cebuano-friendly pricing.

Abaca Baking Company at Robinsons Galleria Cebu

Pastries Galore at Abaca Baking Company

A couple of years ago, I labeled Abaca Baking Company as the trendiest cafe in Cebu.  Three years later, the label remained.  In fact, they created some sort of "Blue Ocean" when it comes to this market segment.  While many pastry shops/cafes held off expansion, ABC is now in places like Robinsons Cybergate, Ayala Center Mall, Paseo Arcenas, SM City Cebu, TGU Tower, and Filinvest Cyberzone.  Abaca Baking Company's artsy Crossroads Mall branch is still a strong all-day breakfast destination.

They are almost everywhere.

Welcome to Abaca Baking Company at Robinsons Galleria Cebu

Recently, they opened their newest branch at Robinsons Galleria.  It is such a beautiful branch.  It looks different but it still exudes the ABC trendy vibe.  According to Abaca Baking Company Director of Operations Patrick Corpuz, the new design will be the norm for future branches.  Can you believe that its their 9th branch already?

The new interior of Abaca Baking Company

ABC Robinsons Galleria is spacious and has the best lighting of all ABC branches.  Lighting surely matters with the Instagram crowd.  When it comes to food, Cebu's top pastry shop has come out with many new items.  They even launched their own tea line as well as cake mixes that allow you to make some of their specialties at home.  The all-day breakfast menu was shored up with the introduction of new choices like their home-made spam.

My First Meal at  Abaca Baking Company Robinsons Galleria Cebu

Cebu's Top Pastry Shop - Abaca Baking Company

ABC via Bigseed Public Relations and Events recently had a Bloggers' event at the newest branch.  I was pretty surprised at how spacious the ABC at RGC is.  I was in their Ayala Terraces branch last week and the seats were quite limited there.   This new branch can rival the best coffee shops out there.  I love the way it looks and the nearby Starbuck's and Coffee Bean and Tea Leaf should be worried.

I was seated with Miss Emma, Miss Divine, The Limpags, Sinjin Pineda of Cebu Bloggers Society, and the Lifeholics couple Mae Godino and Gaylord Tingzon.  We decided to order different items for variety.

Abaca Baking's Reuben Sandwich

Eggs Benedict are a Kalami Cebu favorite in Abaca Baking Company

Breakfast Skillet to the big eater

Abaca Baking's Luncheonette Burger

Chopped Salad for the Vegetarian Kalaminion

I ordered the Reuben Sandwich but after interviewing Patrick Corpuz, I also ended up having their home-made "SPAM" dishes.  For drinks, I had the blueberry, strawberry and banana smoothie.  Miss Emma had Fish and Chips, the Limpags had Eggs Benedict and Chopped Salad, Divine had the Luncheonette Burger, while Sinjin did not order anymore because we had so much food on our table.

Abaca Baking Company makes Homemade Spam

As expected every dish was great but, the home-made Spam was the showstopper for me.  It was spectacular and I love it with the garlic rice and egg.  It was an upscale version of SPAMsilog and I could have it all day.  The spam was yummy and it was not very salty.

Kalami Cebu's Recommended Homemade Spam with garlic rice and eggs. The sosy SPAMSILOG!

I always like the food and coffee at ABC but I usually just get the burger or some of the more affordable pastries but now, I can actually eat rice there.  If you happen to visit Abaca Baking Company Robinsons Galleria Cebu, have some home-made SPAM and let me know what you think about it?

Once again, I would like to congratulate the people behind Abaca Baking Company for their 9th store and I wish for them to open another ten in the next 12 months so that they will 19 branches in 2019. ;)

Food markets have been popping up around Cebu lately and one of the newest is the Yello Cube Food Hub in Wilson Street, Lahug, Cebu City.  I was there on their first day and I got to try food from the first 7 food stalls that have opened there.  Every stall has a good potential to succeed so I am making a feature to one of them every time I visit the new food hub.  Today, I put the spotlight on Buldak Station.

Yello Cube Food Hub Opens

Soft Opening of Yello Cube Food Hub

On August 8, 2018, Yello Cube Food Hub opened its door to Cebuanos.  For its first day, seven food stalls opened featuring a wide variety of cuisine.  There was a stall that sold smoked meat.  Another one had stir-fry specialties while a couple featured SouthEast Asian cuisine. Despite having only 7 stalls, the food choices were many.

Having dinner at Yello Cube Food Hub

Yello Cube Food Hub, Wilson Street, Lahug, Cebu City

If you are wondering where is this located.  Yello Cube is in Wilson Street just a few meters after the old Pino restaurant.  A year ago, this property was the parking lot for Pino diners. Parking is a bit limited but they have mechanized valet parking and if you are early you can also park on Wilson Street.

Buldak Station at Yello Cube Food Hub

Buldak Station at Yello Cube Food Hub
Buldak is a Korean word meaning "fire chicken".  In its original version, it is a heavily spiced barbecue chicken dish. At Buldak station, you can get a spicy fried chicken wing topped with cheese. It is actually one of the many sauces that they put on their chicken wings.

Cheesy Buldak from Buldak Station
I really enjoyed eating their buldak.  It was cheesy and the chicken was seasoned well. It was like a deconstructed pizza without the bread. They also sell a cheesy ribs version of the dish.

The Lamaw of Buldak Station

Aside from the chicken, I also got to taste Buldak Station's Lamaw and Cheesy Baconsilog.  Lamaw is a cheap rice topping dish popular in Guadalupe, Cebu.  Their version here had rice drizzled with the special lamaw sauce then topped with boiled egg and crushed chicharon.  You can also add some siomai with your lamaw.

Cheesy Baconsilog, another favorite from Buldak Station

The cheesy baconsilog is made of fried rice topped with deep-fried thinly sliced bacon, fried egg, and cheese sauce. For only 75 pesos, it is a quick and affordable fix for your hunger.

Buldak Station also serves ngohiong and sisig. It is a food stall that offers some of affordable and easy to love dishes.  My first visit here was fun and I am pretty sure that I will soon be back here for more.

Hong Kong’s longest-running outdoor beer festival showcases traditional German bites, an extensive selection of German beers including the famous Erdinger Weißbräu, plus all-night dancing and good times against the panoramic backdrop of Victoria Harbour. Bierfest wouldn’t be complete without traditional tunes and entertainment, and German musical group The Notenhobler band is a beloved part of Marco Polo’s festivities. Dressed in authentic Oberkrainer clothes, their hearty folk music and games such as the Alphorn-blowing contest, Chicken dance and drinking competitions, make the beer festival even more memorable.
